Fahim goes to work, as per usual, and I’m left to my own devices. Today, I decide to do a couple of loads of laundry. My heat rash is nearly gone, and I can walk around without pain or discomfort. Yay!!!
Talapath Coconut Curry
I have to admit that I love talapath cooked this way. It’s so yummy.
talapath tossed in
1 teaspoon curry powder
1 teaspoon salt
Then fried in
2 tablespoons coconut oil
Add
1 cup oyster mushrooms
1 tomato, diced – about ¾ cup
½ cup coconut milk
Then cook until the sauce is thickened and the fish is cooked all the way through.
Vegetable Curry
Again with the carrots – double the usual amount of carrots because we’re out of potatoes.
3 cloves of garlic , minced, fried in
2 tablespoons coconut oil, then add
1 cup diced carrots
½ cup diced Bombay onions
1 teaspoon curry powder
½ teaspoon chili powder
½ teaspoon pepper
1 teaspoon salt
½ cup water
Cook for five minutes, then add
½ cup green beans
2 chilis2 capsicums
¾ cup tomato, diced.
Cook for five more minutes.
