Beef with Tomatoes and Onion Shoots
Marinate beef in the following for a day or so:
1/4 cup vinegar
2 tablespoons coconut oil (vegetable oil would be better – it doesn’t solidify in the fridge like coconut oil does)
1 1/2 teaspoons curry powder
1 teaspoon red chilli powder
1 teaspoon pepper
1 tablespoon crushed red pepper flakes
2 tablespoons chili tomato ketchup
Then cook on a low heat. When nearly done, add
2 tomatoes, diced
4 green onion shoots, chopped
And it was served with, what else, but vegetable curry and pink rice. I’m getting the hang of this.
