Beef. Better? A little.

Today, we have Marinated Beef with Tomatoes and Onions along with the ubiquitous Vegetable Curry and Pink Rice.

Marinated Beef with Tomatoes and Onions

marinate for a day or two:

beef, enough for two people for two meals, cubed

1/4 cup vinegar

3 tablespoons coconut oil

1 teaspoon curry powder

1 1/2 teaspoons chili powder

1 tablespoon red pepper flakes

4 cloves garlic, smashed and dashed – then cook, adding

3 Bombay onions, chopped. Cook for fifteen or twenty minutes, or maybe it was a half hour? I hardly remember. How lousy is this? Then add

2 tomatoes, diced.

Simmer until done.

 

Not as chewy, but still chewier than I would prefer. Oh well. I’ll get the hang of it.

The vegetable curry today, because we’re having beef with tomatoes, had a cabbage thing going on. It was pretty good.

And then we had an apple-pear for dessert.
